Ingredients

    potato 1 med
    eggs 4 med
    turkey bacon 4 slices
    1 medium onion
    carrots 2 oz
    brocolli florets 2 oz
    grape tomatoes 2 oz.
    4 oz can mushrooms
    canola oil 2 tbsp
    fresh salsa 1 tbsp
    minced garlic 1 tbsp
    milk 1% 1oz

Directions

chop all vegetables & turkey bacon into bite size pieces. Heat frying pan adding canola oil. when pan heats add potatoes, garlic, onion, carrots,brocolli & mushrooms. cook for 10-12 minutes until potatoes are tender. add salsa, egg and grape tomatoes. When eggs are done, serve

    Very Good! I didn't quite have all the ingredients and ended up substituting the broccoli for zucchini, chopped canned tomatoes instead of the grape tomatoes and used 3 egg whites plus 2 whole eggs. Thoroughly enjoyed. Thanks for the recipe, it's exactly what I was looking for this morning!! - 1/30/10

    Just fixed this and it was 'VERY GOOD'!! Made me a nice cup of cappuccino to go with it and sat down to a feast!! I was very very happy that you shared it with me. Now,i agree with you ,Good things need to be shared. - 1/17/10
