Ingredients

- 1 red bell pepper, cleaned and chopped
- 2 roma/plum tomatoes, diced and drained
- 1.5 cup imitation crabmeat
- .75 cup cheese (optional if you are lactose intolerant)
- 4 large eggs
- 1.5 cup Silk soy milk, unsweetened (or equivalent amount of 1% milk if you prefer)
- 1 tsp. garlic salt (more or less to taste)
- 1 tsp. dried minced onion (more or less to taste)
Directions
1) Preheat oven to 375 F.
2) After making sure your pepper and tomatoes are cut and cleaned, quickly saute them in a skillet with the garlic salt and onion and set aside.
3) Put eggs and soymilk (or milk) in a mixing bowl and mix together briskly with a whisk until well blended.
4) Start layering ingredients in a regular-sized, very lightly greased pie pan or equivalent sized stoneware, starting with the vegetables and the imitation crabmeat. Pour the egg mixture over vegetables and meat, then top with an even layer of cheese, if you opt to include cheese in the recipe.
5) Bake in the oven for 30-45 minutes. Remove from oven and allow quiche to sit when outside is done, as the inside will continue to cook for a short time.
6) Serve after the quiche cools. Can be eaten warm or chilled.
