Delicious, healthy and satisfying as a meal or a side dish! Delicious, healthy and satisfying as a meal or a side dish!
Number of Servings: 2

Ingredients

    sweet potato, about 1 cup, cubed
    1/4 cup pecans
    3 tsp, unpacked brown sugar
    1/2 cup chopped red or vadalia onions
    1 tbsp olive oil
    1-2 cloves garlic, crushed
    1 tsp thyme
    1 tbsp balsamic vinegar

Directions

Toss together sweet potato, onions, garlic, olive oil and thyme. Pour into shallow baking dish. Bake at 425 degrees for 30 minutes until softened and golden brown, stirring half way. Meanwhile, toss chopped pecans with brown sugar. Add to sweet potatoes and bake 5 minutes until brown sugar carmelizes. Drizzle with balsamic vinegar and season with salt and pepper to taste.
Makes 2 servings. Doubles well.
