Introduction

It's a little odd-looking, for sure, but you can't beat the simplicity! Tender Savoy cabbage gets sear-sauteed with a can of salmon befoe being dressed with a Greek inspired yogurt sauce. Ingredients

    1/3 cup nonfat yogurt (Source)
    1 clove garlic, minced
    2 tbsp minced red onion
    3 tbsp finely diced English cucumber
    Zest of 1/2 lemon
    1 tsp dried dill
    1/2 tsp dried oregano
    dash paprika
    6 oz Savoy cabbage, shredded
    1 can Gold Seal flaked "tuna-style" salmon, drained
    Coarsely ground black pepper

Directions

In a small bowl, combine yogurt, garlic, onion, cucumber, lemon zest, dill, oregano and paprika. Set aside.
Heat a large, non-stick frying pan over high heat, spray with a light coat of non-stick spray.
Add cabbage shreds and cook, stirring occasionally, 5 minutes. It should begin to brown and even blacken in areas.
Add salmon and toss through to heat thoroughly. Remove to your serving bowl(s).
Pour the yogurt mixture overtop of the cabbage mixture, toss lightly to coat.
Garnish with pepper to taste and serve immediately.
