Introduction

Been making these for years every saturday morning. The kids love them. This recipe feed my two pre-teen kids and my wife and I with no leftovers. Been making these for years every saturday morning. The kids love them. This recipe feed my two pre-teen kids and my wife and I with no leftovers.
Number of Servings: 16

Ingredients

    3/4 c - white flour
    3/4 c - whole wheat flour
    1/4 c - ground golden flaxseed
    2 tsp baking powder
    1 tbsp canola oil
    1 lg egg
    2 cups buttermilk (lowfat - I make my own)

Directions

Mix all the dry ingredients. In a separate container, mix the oil and egg, then add and mix the buttermilk. Add to the dry ingredients and mix. optional at this point: add blueberries (go antioxidants!) , or add 1/2 cup mini chocolate chips when the kids ask for them.

Let sit for 5 min while the griddle gets hot for the leaven to work. Put a little less than 1/4 cup onto the griddle/pan per pancake. Makes 16 pancakes, each 'serving' in this recipe is 1 pancake based on this estimate.
