Introduction
My family tends to like spicy food, so some of the spice and number of jalapenos varies. I also usually just add spices to taste and not measurement so they may need some adjustments to taste. Ingredients

4 cups small diced potatoes (about 1 lbs)
1/2 cup diced onion
1/2 cup diced green bell pepper
2 tbsp Extra Virgin Olive Oil
3 cloves minced garlic
2 diced jalapeno peppers (seeded or not, your taste)
1/2 tsp ceyenne pepper
1 tsp salt
2 tps pepper
1/4 cup water if needed
Directions
In a 12" skillet, add all ingredients EXCEPT water. Mix to coat all pieces with the oil. Cover and cook over low to medium heat. Stir occasionally. About half way through cooking time, (you can tell by how soft the potatoes are) add water and stir. Done when potatoes are soft.
Dual advantage to the water. It helps steam the potatoes during cooking and it will also loosen up the stuck bits of potato to the bottom of the pan for easier clean up.
Makes 7 1/2-cup servings.
