Ingredients

    1/2 cup plain fat free yogurt
    2 Tbsp lemon juice
    1 Tbsp minced garlic
    1/4 tsp salt, divided
    1/4 tsp black pepper, divided
    1/8 tsp cardamom
    1/8 tsp cumin
    1/8 tsp cinnamon
    1/8 tsp nutmeg
    2 4oz boneless, skinless chicken breasts
    1/2 cup vegetable broth
    1/2 Tbsp olive oil

Directions

Combine yogurt, lemon juice, garlic, 1/8 teaspoon salt, 1/8 teaspoon pepper, cardamom, cumin, cinnamon and nutmeg in a ziplock bak or container. Add chicken and seal. Marinade in refrigerator overnight.

Remove chicken from marinade, reserving extra marinade. Combine reserved marinade and vegetable broth.

Heat oil in a large skillet over medium high heat. Sprinkle chicken with remaining 1/8 teaspoon salt and pepper. Add chicken to pan; cook 2 minutes on each side or until browned. Pour broth mixture over the chicken and bring to a boil. Cover, reduce heat and simmer for 12 minutes or until chicken is done.
