Ingredients

1 T. Canola Oil
1 cup sliced mushrooms
1 cup diced onions
1 diced green pepper
1 pound chicken breast, cut into 1/2 inch pieces
4 garlic gloves, minced
1 cup diced Velveeta cheese
1 can Healthy Request Cream of Mushroom Soup
3 cups cooked rice
1 can green beans
1 can green peas
1/2 cup fat free sour cream
1 T. Garlic and Herb Seasoning
1/2 t. Cayenne Pepper - Flavor to Taste
1/4 cup bread crumbs
2 oz shredded 2% cheddar cheese
Cooking Spray
Directions
~ Preheat oven to 400 degrees.
~ In large pan, heat oil over medium high heat.
~ Saute chopped onion, mushrooms, bell pepper, garlic until wilted.
~ Add and saute chicken until cooked through.
~ Add Garlic & Herbs and Cayenne Pepper
~ Stir in un-diluted Mushroom Soup and diced Velveeta cheese; continue to stir until mixed through.
~ Turn off heat and add peas, green beans, rice, sour cream and mix well.
~ Pour into 2-quart baking dish sprayed with cooking spray and bake uncovered for 20 minutes.
~ Remove from oven and sprinkle bread crumbs and cheddar cheese and return to oven for 10 minutes.
