Introduction

I concocted this when I didn't have the right bread to follow the original recipe. This is my own recipe, the only thing I was able to take from the book was tomato and avocado. The rest I threw together. When my boyfriend that does not like tomato and avocado together, said it was his favorite vegetarian meal as of yet and wanted seconds, I though I'd share it. The nutritional info varies, so didn't list. The fat mainly comes from Mayo, cheese and avocado. The avocado is good fats though. Ingredients

    2 wheat tortillas
    1 avocado
    Romaine lettuce
    1 small tomato sliced
    2 Slices Swiss, Colby, or American cheese. I prefer Colby
    1/2 tsp Dijon mustard
    1/2 tsp light mayonnaise
    Pepper, and garlic powder and dried parsley to taste
    Butter

Directions

This serves 1 wrap per person. Start by pitting and peeling avocado. Slice it up. Slice tomato add to sliced avocado. Sprinkle pepper, garlic powder, and dried parsley to taste. Mix well to coat. Now prepare skillet and add small amount butter to skillet. Take tortilla and add Dijon mustard and light mayonaise. Spread evenly. Take 1 slice of cheese tear in half and place on mustard/mayo mixture in center of tortilla top to bottom. Place tortilla dry side down onto heated skillet. Cook til lightly brown or as desired. Approximately 1 minute. Remove from skillet and add romaine lettuce, and avocado mixture. Wrap will be full unless you use large tortillas, but for lunch I prefer the taco size. Serve as is and allow the eater to wrap up. Yummy!
