Number of Servings: 8

Ingredients

    1 cup Fiber One pancake mix prepared according to box directions
    1/2 cup canned pumpkin
    1 TBSP Flaxseed Oil (optional)
    1 tsp cinnamon
    1 tsp pumpkin pie spice
    1 TBSP Vanilla Extract
    1/3 cup Pecans (optional)

    * You can choose to add in raisins, walnuts, almonds, etc.

Directions

Makes 8 - 4 inch pancakes

Prepare 1 cup Fiber One pancake mix according to box directions.

Add in 1/2 cup canned pumpkin. Stir and mix well.

Add in flaxseed oil, vanilla, pumpkin pie spice and cinnamon. Stir up spices into mix.

Add pecans.

Drop 1/3 cup mix on to lightly greased (I use Pam Cooking Spray) skillet over medium heat. Cook 1-2 minutes.
