Nice rice side dish - just for a change. Nice rice side dish - just for a change.

Ingredients

    3 T Olive oil
    1/4 c onion - chopped
    1/4 c celery - chopped
    1/4 c almonds - chopped
    1/4 c red pepper - chopped
    1 clove garlic - minced
    1 T dried parsley
    1/2 t salt
    1 1/2 t curry powder
    1 1/2 c brown basmati rice
    3 c water

Directions

saute veggies and nuts in olive oil - add rice and curry powder. Saute for a few minutes and add water. Bring to a boil, cover, reduce heat to minimum and cook for 40 to 45 minutes.
Makes 8 1/2 c servings
