Introduction
I was featured in "Taste of Home" this past summer with this recipe! There was a restaurant that I went to alot with my friends and I ALWAYS had the grilled veggie sandwich with goat cheese. After 10 years of going there every month, they closed down this past fall so I had to start making my own. It is a weekly meal during the summer at my home. Serve it with my spicy sweet potato fries and you have a great healthy meal. I was featured in "Taste of Home" this past summer with this recipe! Ingredients

4 hoagie rolls, preferably one with a good whole grain
2 TBLS Olive oil
salt and pepper to taste
3 cloves garlic, put through a garlic press so it is crushed into very small pieces
(Each of the veggies below sliced lengthwise into 1/2 inch thick)
1 large eggplant
1 or 2 yellow squash
1 or 2 zucchini squash
( you will grill the above veggies)
1 large onion sliced
1 large tomato sliced
Red leaf lettuce, 4 large leaves
4 ounces of lowfat plain yogurt
2 ounces of goat cheese (can also use feta cheese)
1 TBLS of parmesean cheese
Directions
Prepare your grill. Mix olive oil and garlic in a bowl together and let sit while you slice all the veggies. use a silicone pastry brush and brush each veggie with the olive oil mixture and then sprinkle with salt and pepper. Grill over coals for about 3 minutes each side, until tender with grill marks. Meanwhile mix yogurt, goat cheese and parmesean cheese together and spread over toasted hoagie roll. Layer each hoagie roll with the grilled veggies and top with teh onion, tomato and lettuce. Serve with my spicy sweet potato fries that is also listed in the recipe section. Enjoy! (the restaurant that I had this at served with a black bean soup that is also very good....trying to perfect that one still)
