Introduction

I add fruit juice to almost all salad dressings - even store bought ones - because I vastly prefer the taste of dressings when the strong flavor of oil and vinegar and spice (or salt!) is diluted a bit. As a bonus, it makesthe dressing spread through your salad further and reduces the need for more calorie laden dressing. Ingredients

    1 cup Olive Oi
    1/2 cup Balsamic Vinegar
    1/2 cup Orange Juice or any other juice you have in house - add more juice for more calorie reduction.
    Garlic to taste, a clove or dollop from a jar.
    1 tbsp Yellow Mustard - to taste
    1 tsp All fruit jam (or consider any condiment you have in fridge to change up flavor like plum sauce, mango chutney. or marmalade.
    Pepper, maybe salt, any other spice or herb you like.

Directions

Mix it up, taste it and add herps and spices to taste. This is best with good greens. I suggest always mixing salad and dressing very well in a large bowl before putting it on plates. This will encourage you to use much less dressing but the salad will taste even better.

HINT: When you buy or bring salad in a container, make sure you put the dressing on and then close container and shake shake shake. It tastes much better and you won't need a second application of dressing.
