Introduction

Number of Servings: 6

Ingredients

    2 garlic cloves
    1 medium onion, chopped
    1 celery stalk, chopped
    1 medium green pepper, chopped
    1 15 oz. can kidney beans, rinsed and drained
    1 14 1/2 oz. can diced tomatoes, undrained
    16 oz. smoked sausage
    1/4 tsp dried thyme
    1/4 tsp black pepper
    1 tsp salt
    6 c. chicken broth
    1 c. uncooked white rice, converted variety

Directions

Combine all ingredients in slow cooker; set on high and cook for 4 hours. about 2 c. per serving.

You can kick it up with cayenne or red pepper flakes.

    I made this last year before SP and LOVED IT! Just thought of it again and was happy to find it already here! My husband and toddler really enjoyed this also. Great flavor. - 2/7/11
