Introduction

Ingredients

    7.5 oz whole wheat pasta (reserve .25 cup pasta water)
    1 lbs ground chicken (can substitute turkey)
    2 tablespoons olive oil divided use
    2 tsp garlic
    1 medium red bell pepper cut in chunks
    2 small zucchini cut in chunks
    2 small yellow squash cut in thin strips
    1 14 to 16 oz can of tomatoes
    1 tsp dried basil
    salt and black pepper to taste


Directions

Cook ground chicken until no pink remains. Remove from pan and set aside.
Cook and drain pasta according to package directions reserving 1/4 cup pasta water.
In large saute pan heat one tablespoon olive oil add garlic saute 30 seconds, add green pepper, saute 1 to 2 minutes.
Add zucchini and yellow squash, saute another 1 to 2 minutes.
Return ground chicken to pan,and stir or toss to coat, add olive oil as needed to prevent sticking.
Add basil and a pinch of salt and pepper to taste.
Add pasta, and tomatoes and heat through.
Stir or toss to heat and combine.
Makes 4 main dish servings.
