Ingredients

    4 tablespoons butter
    3/4 medium onion, chopped
    1/2 cup squash, chopped
    1/4 cup green bell pepper, Chopped
    1 garlic clove, minced
    1/8 cup lemon juice
    1/8 cup soy sauce

    20 ounces tomatoes, diced
    2 tablespoon paprika
    1 tablespoon blackening seasoning
    1/4 teaspoon thyme leaves
    1/2 ounce parmesan, grated

    20 ounces catfish

Directions

Melt 2 tablespoons butter in wide frying pan or dutch oven over medium heat; add garlic, onion, squash, and jalapeno pepper. Cook until soft (5 minutes); add tomatoes, lemon juice, soy sauce, paprika, and thyme. Cook, stirring occasionally, until sauce thickens (15 minutes).

Put fish on top and cover with sauce. Cover pan and simmer for about 15 minutes.

In frying pan melt 2 tablespoons butter. Remove fish from sauce and place in frying pan. Add blackening seasoning and parmesan cheese. Cook until fish flakes easily.

Makes 2 servings.
