Ingredients

*OXO Chicken stock cube (per cube), 1 serving*
1 cup warm water, 6 serving
*onion, fresh, 50 gram(s)
Garlic, 10 grams
Mushrooms, fresh, 100 grams
*Snap Peas (Snowpeas / Sugar snap peas),
100 gram*Broccoli (Fresh) per 100g, 100 gram
*king prawn, 100 gram(s)
*Mussels, Pacifica Kiwi Mussels (6, 100 g), 1 serving
*Fish, fresh (Orange Roughy), 3 oz
**Kraft 2% Shredded Mozzarella, 60 gram(s)
*Peppers (red, sweet, fresh) 1oz/28grms, 3 oz
Fresh Chives, 5 grams
*Basil, fresh, 5 gram(s)
Butter, unsalted, 20 grams
Parmesan Cheese, shredded, 20 grams
Sour Cream, reduced fat, 100 grams
White Wine, 50 mL
Atlantic Salmon (fish), 100 grams
salt to taste /freshly milled pepper also some chopped chilli can be added if desired
Directions
Makes 6 x 350gm serves
Saute finely diced onion and minced garlic in the butter, when onion is cooked add rice. Then dissolve the stock cube into the water. Add half the liquid, stirring constantly.Cover with a lid and turn off heat to let rice steam.
Blanch broccoli pieces and peas in boiling water.
Prepare fish by cutting it into bitesize pieces, leave prawns whole.
Slice mushrooms ,and cook in the wine, add seafood and steam until just cooked.
To serve add chopped red peppers, cream, cheeses vegetables, salt pepper, and seafood and finally add chopped herbs.
