Ingredients

    2 cups cooked couscous (prepared according to package instructions)

    1 cup fresh mushrooms, sliced

    1 cup diced broccoli

    1.5 tsp cummin powder

    salt and pepper to taste

    a pinch of cardamom powder or more to taste

    vary the veggies according to your preferences or what is left over in the refridgerator!


Directions

Prepare couscous according to instructions on the package.

Spray a wok or pan with cooking spray and saute the broccoli and mushrooms.

Add the couscous and stir, adding cummin powder, salt, pepper and cardamom.

Use any vegetables you like in place of broccoli and mushrooms. I made this dish out of what I had in the refrigerator at the time.

You can use oil instead of cooking spray, but it will add calories.
