Hummus is one of the more popular Middle Eastern dips. Served with fresh or toasted pita bread, hummus makes for a great snack or appetizer. This recipe starts with a 1lb bag of dried Garbanzo beans. Ingredients

    1 16 oz bag of dried chickpeas, soaked and cooked
    1/4 cup liquid from chickpeas
    3-5 tablespoons lemon juice
    3 tablespoons tahini
    5 cloves garlic crushed
    1-1/2 tsp salt

Directions

Soaking and cooking chickpeas beforehand takes 2 1/2 hours. Once done - drain and reserve 1/4 of cooking water. Combine all ingredients in blender. Add cooking water. Blend thoroughly until smooth.

Place in serving bowl and create a shallow well in the center. Add a small amount (1-2 tablespoons) of olive oil in the well. Can add a dash of cayenne pepper.

Can be refrigerated for up to 3 days and can be kept in the freezer for up to one month.

Makes 14 -half cup servings.
