Ingredients

    1.75 lb Lamb Shanks (2 shanks w/bone)
    2 - 28oz cans diced tomato
    4 cloves garlic, minced or crushed (more if you like it_
    1 cup golden raisins
    3/4 cup dried apricots
    2 small onions, sliced or equivalent
    3 T cumin
    2.5 T cinnamon
    1 T fennel
    handful of mint leaves
    salt and pepper to taste

Directions

Add lamb, tomatoes, onion, garlic, and spices to the slow cooker. Braise for at least 6 hours on low. Close to the end, add dried fruit and mint leaves.

Serving:
Pull out lamb shanks and cut the meat from the bone into a serving bowl. Dump tomato/onion/fruit sauce over top and stir into a stew.

Serve with couscous, rice or flat bread. Makes at least 8 servings.

    This sounds excellent. But I am new to fennel. I am afraid I would add to much. How much did you add? And 1 lb serves 8 people? Is this correct? - 1/9/10

    I just put a few shakes of fennel out of the spice shaker -- sorry, I'm kind of a "by feel" cook, so I don't have a precise amount. I served 8 on a lb of lamb shanks. There's more veg than meat in this dish.
