Number of Servings: 6

Ingredients

    1 1/2 lb pork tenderloin
    2 cups white rice
    10 oz. package mixed vegetables - frozen
    4 cups hot water
    1 pkg Lipton Soup Mix

Directions

Place rise in a 8x13 inch lightly grease casserole dish.
Add soup mix, rice and frozen vegetables.
Add hot water and stir thoroughly.
Place pork tenderloin on top of rice and vegetables.
Bake at 375 degrees for 45 minutes or until all the water is absorbed.

To make this with brown rice, you need to bake the rice for 20 minutes before adding the vegetables and tenderloin or the pork with dry out before the rice absorbs the water.

Serves 6 large portions, or 8 small.
