Introduction

A light and fresh mix of summer vegetables that will make you forget about eating pasta! A light and fresh mix of summer vegetables that will make you forget about eating pasta!
Number of Servings: 4

Ingredients

    1 Whole Spaghetti Squash ,cooked and separated
    1 Large Tomato, diced
    1 Cup Fresh Mushrooms, sliced
    1 Leek, diced
    .5 cup Onion, diced
    5 Leaves Fresh Basil, diced
    2 Tbs. Fat Free Italian Dressing
    .5 Cup Fresh Mozzarella Cheese, shredded
    Pam Non-stick spray
    Salt & Pepper to taste

Directions

Cut Spaghetti Squash in half and cover each piece with plastic wrap. Microwave for 10-15 minutes until tender and remove flesh from rind. While that is cooking, dice all vegetables. Heat large non-stick skillet and use non-stick spray. Add Onions, Leek, and Garlic and saute 4 minutes until onions are soft. Add the rest of the vegetables and dressing and saute for 10-12 minutes until tender.
Plate each serving and add salt & pepper to taste. Top with fresh mozzarella cheese.

Makes 4, 2 cup servings! MMMMMMM!
