Number of Servings: 4

Ingredients

    2 medium green onions, chopped
    1/2 medium green pepper, chopped
    1/2 medium red pepper, chopped
    15 oz can black beans, rinsed and drained
    1 c frozen corn, cooked and cooled
    Juice of 1 fresh lime
    1 Tbsp canola or corn oil
    8 oz chicken breast, cooked, skinless, chopped
    2 Tbsp taco seasoning (about 1/2 of a 1.25 oz packet)
    4 Tbsp chopped cilantro
    4 Tbsp fat-free or lite sour cream

Directions

Combine green onions, peppers, beans and corn in a large bowl; toss well.
Add lime juice and oil to bean mixtgure; toss. Add chicken, taco seasoning and cilantro; toss. Chill.
Place 1 1/2 cups of this salad mixture on top of a bed of salad greens, top with sour cream.
