Ingredients

    Ingredients:
    *Bulger Wheat, 1.5 cup
    Swanson Chicken Broth 99% Fat Free, 3 cups
    *Lemon Juice, .25 cup
    *Lemon Juice, 2 Tbsp
    Chicken Breast, no skin, 8 ounces cooked and chopped
    Cucumber (peeled), 1.24 cup, pared, chopped
    Red Ripe Tomatoes, .5 cup cherry tomatoes
    Great Value Manzanilla Green Olives (Pimiento Stuffed ) 5 Olives, 3 serving chopped
    Parsley, .25 cup
    Roasted Red Peppers drained and diced .25 cup
    Onions, raw, .25 cup, chopped
    Basil, 3 tbsp
    *Extra Light Olive Oil, 3 tbsp
    Oregano, ground, .25 tsp
    Pepper, black, .5 tsp
    Red Wine Vinegar, .25 cup

Directions

Bring chicken stock to a boil.
Place Bulger in a bowl add 1/4 cup lemon juice and salt
Pour boiling broth over bulger and cover for abour 30 minutes, most of the broth should be disolved. Drain bulger well.

In a large bowl add all the veggies, the olives, parley and basil. add the cooked cubed chicken. Stir in the bulger.

in a small bowl wisk the olive oil, 2 Tbsp lemon juice and red wine vinegar and black pepper. (you add more salt to the dressing if you choose) pour over salad and toss..
