Ingredients

    Beef, tip round, 2.5 lb cut into bite-size pieces
    Flour, 1/4 cup
    Baby Carrots, raw, 20 medium cut into bite-sized pieces
    Celery, raw, 2 stalk, large (11"-12" long), cut into bite-sized pieces
    Green Peppers (bell peppers), 1 bell pepper cut into chunks
    *Potato, raw, 5 medium (2-1/4" to 3-1/4" dia.), cut into chunks
    Onions, raw, 1 medium (2-1/2" dia), cut into chunks
    Oregano, ground, 1 tbsp
    Thyme, fresh, 2 tsp
    Beef bouillon, 2 portion, amount of dry mix to make
    Salt, .5 tsp
    Pepper, black, 1 tsp
    Water, tap, 2 cup (8 fl oz)
    Olive oil, up to 2 Tablespoons for braising beef

Directions

Makes 10-12 1 cup servings. Place meat and flour in plastic zip lock bag and shake to coat meat. Cook meat on high heat in small amount of olive oil until browned. Place all ingredients in crock pot and cook 6 hours on high or 8-10 hours on low.
