Ingredients

    1 Lg Eggplant, unpeeled and diced
    3T extra virgin olive oil
    8oz tomato sauce
    3 garlic cloves minced
    1 green pepper, seeded and chopped
    1T ground cumin
    1/2 tsp cayenne pepper
    2tsp sugar
    2tsp salt
    1/4c balsamic vinegar
    1T minced fresh coriander


Directions

In a large wok or heavy skillet heat oil. Add all the ingredients except corriander and cook the mixture over medium heat, covered, for 20 minutes or until liquid disappers. Chill covered. Stir in corriander just before serving with toasted pita bread.
