Introduction

We wanted Chinese food because it would be easy to pick up. I started thinking about all of the sodium it would have (not to mention the calories!) and remembered I had bought some of these items not too long ago. Ingredients

    1 Package Bird's Eye Steamfresh Mixed Vegetables
    2 Packages Bird's Eye Whole Grain Brown Rice
    1 lb Fresh Chicken Breasts, boneless and skinless
    1/4 C Fresh Almonds, raw
    1 T Sesame Oil
    1 T EVOO
    1 T Garlic Powder
    1 T Smoked Paprika
    2 t Liquid Smoke
    1 T Crushed Red Pepper Flakes
    1 t Sea Salt

Directions

Makes 6, 2 cup servings

Add oils and almonds in large skillet on low heat. Stir to coat almonds. Cover. Stir occasionally until toasted.

Cook rice and mixed vegetables according to package directions. Set aside. Grill chicken without oil until done. (I used a George Foreman type grill). Cut chicken into bite size pieces.

Combine all ingredients in skillet. Stir over a medium heat until heated through and mixed completely.
