Number of Servings: 5

Ingredients

    2 cups - Black Beans (about 2 cans)
    1 cup - Salsa
    1 cup (8 fl oz) - Chicken Broth or Bouillon
    1 tsp - Ground Cumin
    5 tbsp - Fat Free Sour Cream

Directions

1. Drain beans, and blend all ingredients, except sour cream, in a blender.

2. Heat blended soup on stove or in microwave.

3. Add a tbsp of sour cream on top of each serving of soup.

    I substituted fat free greek yogurt for the sour cream and added a few drops of tabasco. Absolutely delicious. Even 15 y/o son loved it. - 3/2/11

    I just made a one-serving portion of this for myself. I had time to run to the store, buy the ingredients, come back to work, and make the soup all on my lunch break! Now I'm enjoying a mugful at my desk.

    Delicious! I didn't have sour cream, so I made it without, but I still think it was wonderful. My boyfriend said it taste better than the soup they serve at a local restaurant (which is famous for soups). I will definitely be making this one again! - 8/28/10
