Ingredients

    1 medium chopped onion
    1Tbsp olive oil
    2cloves garlic minced
    3 chopped sundried tomatoes
    4-5cups finely chopped escarole
    4cups chicken or vegetable broth
    1tsp salt
    1tsp pepper
    1tsp red pepper
    1/2 tbsp basil
    1tbs parmesan cheese
    2cups rinsed white beans (great northern/canelli)
    1can diced Italian style tomatoes in juice

Directions

cook chopped onions in 1tbs olive oil until transparent. add minced garilic, and chopped sundried tomatoes. Add finely chopped escarole until cooked. Rinse white beans and add remaining ingredients (i like to use the Italian style canned tomatoes). Serve hot. garnish with light sprinkle of parmesan cheese if you like:) yummy!
