Introduction

Easy soup made with skim milk. Easy soup made with skim milk.
Number of Servings: 6

Ingredients

    1 1/2 -- 2 lbs asparagus
    2 cups skim milk
    1-4 cups chicken broth, plus 1-4 cups water
    1 cup white wine
    1 onion
    2 cloves garlic
    1 T balade light butter, or light margarine
    1 T olive oil
    1 can of artichokes in water, cut into quarters

Directions

Saute onion and garlic in butter and oil, w/1/4 cup water.
Add broth and water, plus asparagus. (Cut tips off first and reserve for the end).
Cook until asparagus is tender.
Add half of the milk and wine, stir until heated through.
Put through a blender.
Add artichokes and reserved asparagus tips at the end, plus rest of the rmilk, then reheat.
Serve topped with diced ham if desired.
