Introduction
This is a very hearty oatmeal, easy to fix and unusual. The blueberries give the oatmeal a bright purplish hue if you add them early in the process. If the tartness of the lemon is too strong, additional sweetner may be necessary. The oatmeal stays as individual grains rather than turning into mush. Ingredients

3 C oatmeal
2 large eggs, beaten
1 Tbsp canola oil
2 C water
1/2 C fresh squeezed meyer lemon juice (about 2 large lemons)
3 C frozen, unsweetened blueberries
1/4 C agave nectar
Directions
Makes 8 1/2 C servings
Mix oatmeal and beaten eggs together in mixing bowl. Make sure all oatmeal is coated with the egg. Add oatmeal to frying pan coated with 1 tbsp. canola oil and cook until oatmeal is dry and lightly toasted. Add water and lemon juice and cook until liquid is nearly all absorbed. Add blueberries and agave nectar and cook until liquid is absorbed and blueberries are no longer frozen inside.
