Introduction

This is what I came up with for our SuperBowl feast. I am cooking it in my rice cooker which has a slow cooker feature, but it can be cooked in any slow cooker and the instructions will reflect that. Ingredients

    2 Tbsp Olive Oil
    1 med onion, diced
    3 cloves garlic, minced
    1 lb ground bison
    1 (28-oz) can crushed tomatoes
    3 (14-oz) cans tomatoes with chiles
    1 1/2 cup black beans, drained and rinsed
    2 (14 1/2-oz) cans light red kidney beans
    1 cup canned jalapenos, minced
    1 Tbsp chili powder
    1 tsp cumin
    1 tsp oregano

Directions

Heat olive oil over med-high heat. Saute onions in oil until transluscent; about 4 minutes. Add bison and garlic and cook until meat is no longer pink: about 3 minutes. Add meat mixture and all other ingredients to crock of slow cooker and mix well. Makes 9 2-cup servings. Or alternatively, you could serve one cup over a cup of pasta.
