Ingredients

Dry:
~1 1/2 cups flour (I used half whole wheat and half AP flour because we ran out of WW)
~1 tsp baking powder
~1/4 tsp baking soda
~1/2 tsp salt
~3/4 cup granulated splenda
~optional (included in calorie counts): 2/3 cup chopped walnuts
Wet:
~3 medium-sized overripe bananas, mashed or run through a food processor
~1/4 cup milk
~1/4 cup light sour cream
~1 egg
Directions
1.) Preheat the oven to 350* F and lightly grease a loaf pan with non-stick spray
2.) Combine all dry ingredients except nuts in a large
3.) Beat the eggs in a medium-sized bowl for a minute or so, then add the remaining wet ingredients.
4.) Pour the wet mixture onto the dry and stir with a wooden spoon 10 times, until it they are combined but still lumpy.
5.) Fold in the nuts, if using.
6.) Pour into your prepared loaf pan and bake about 45-60 minutes (check with a toothpick)
