Ingredients

    2 lg redgold potatoes, diced
    1 cup ham
    1 cup cheddar cheese
    4 lg eggs
    4 lg egg whites
    1 cup milk (1%)
    1 tsp garlic powder
    1/2 pkg frozen artichoke hearts, quartered
    1 (4-oz) can sliced mushrooms
    1 (10-oz) pkg frozen spinach

Directions

Place diced potatoes in prepared 9X9 pan. Season with garlic powder. Bake at 350 for 20 minutes, stirring potatoes halfway through. While the potatoes are cooking, dice ham, shred cheese, quarter artichoke hearts and thaw spinach. Scramble eggs, egg whites and milk together. After potatoes have baked, sprinkle ham, vegetables and cheese over potatoes. Then pour egg mixture over top. Bake 25-30 minutes at 350 or until eggs are set. Allow to set 5 minutes before serving. Makes 4 servings.
