Ingredients

    2 C. Brown Rice Flour
    1 Egg
    1.25 c. Non Fat Yogurt
    1 C. Dried Apricots
    1 C. Dried Currants
    1 C Apricot Conserve (Fruit Sweetened0
    1 tsp. allspice
    1 tsp. cinnamon
    1 tspp. nutmeg
    1.25 tsp baking soda

Directions

Grease standard size loaf pan and preheat oven to 350 degrees F. In a medium-sized bowl, combine egg. yogurt, jam. Add 1 C. flour and half the spices plus baking soda. Stir until batter is evenly moist.
Add remiaing flour and spices. If consistency feels too thick add a few drops of cold water to mixture. Fold in apricots and currants.

Pour batter into greased loaf pan and bake 40 - 45 minutes until done.
Remove bread form pan and cool on a wire rack.
