Introduction

Ingredients

    2 gloves garlic
    1/3 cup peanut butter
    1/2 tsp red pepper flakes
    8 oz linguine
    2/3 cup low sodium chicken or veggie broth
    2 TBSP soy sauce
    1 1/2 TBSP lime juice
    1/2 lb snow peas cut diagonally into thin slices
    2 scallions chopped
    1 cucumber peeled halved lenthwise seeded and sliced thin

Directions

In blender or food processor, combine garlic, soy sauce, peanut butter, broth, lime juice, red pepper flakes. Puree until smooth. cook linguine in large pot of boiling water for 9 minutes or until almost done. Stir in snow peas until pasta is done about 3 minutes more. Drain and toss with peanut sauce, scallions, and cucumber.
