Introduction

Ingredients

1/2 c. butter
2 eggs
1 cup buttermilk
2 cups spelt flour
2 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
3 bananas
1/2 c. applesauce, unsweetened
1 tsp vanilla
1 tsp cinnamon
1/4 tsp stevioside
optional:
1/4 c. flaxseed, ground
1/4-1/2 cup chopped nuts (both add extra calories, recipe calculated with flax but not nuts)
Directions
soak flour in buttermilk overnight at room temp
next morning, mix stevia, baking powder and soda, salt, and a little bit of flour (plus flaxseed if desired). set aside.
Mix mashed bananas, beaten eggs, softened butter, applesauce, and vanilla. Incorporate into flour/buttermilk. Whisk in stevia mixture just until mixed.
bake in greased loaf pans, fluted pan, or muffin pan at 350 (1 hour or so for loaf and fluted pans, less for muffins)
