Introduction

Nice quick salad using left over Rotisserrie Chicken and simple additions. Ingredients

    1/2 cup Chicken Breast,boneless,skinless
    1/4 cup Chicken, Dark meat, no skin
    2 large Hard Boiled Egg Whites only
    1 TBS Onion,chopped
    1 Lg Celery, stalk,chopped
    10 Grapes Red, quartered
    2 TBS Pecans, chopped
    5 TBS Kraft Light Mayo w/Olive Oil

Directions

This recipe as described yields 4 servings about 1/2 cup each.

1) If using home prepared chicken, prepare as you normally would. If using a store bought rotisserrie chicken, remove the skin and separate the meat from the bone (add 15 minute prep time).

2) Dice hard boiled egg whites and chicken

3) Chop celery and onion

4) Quarter grapes

5) Mix in bowl with 5 TBS of Kraft Light Mayo w/Olive Oil

6) Add chopped pecans to top of salad

***I like my salad chunky,rustic style, but this salad would also be good mixed in a good processor,

Serve in a Pita, on top of salad greens, or on your favorite bread.
