Ingredients

4 Tbsp lemon juice
1/8 cup white wine
1 Tbsp olive oil
2 cloves garlic, minced
1 Tbsp dried oregano
1/4 tsp salt
1/8 tsp black pepper
1 lb boneless, skinless chicken breast (chopped into chunks)
2 cups thickly sliced onions
Directions
1) Combine everything except chicken and onions in a shallow bowl.
2) Add the chicken & onions & toss to coat.
3) Cover & marinate in the fridge at least 4 hours, or overnight.
4) Preheat oven to 450 & fire up the grill*. Place chicken, onions, and marinade in 13x9 pan, cover with foil and bake for 10 minutes.
5) Place onions on the grill sealed in a foil packet. Grill chicken directly on the grill, turning 2-3 times, basting with remaining.
*To broil instead of grilling: After initial baking, place chicken and onions on a broiler rack and broil 4-5 inches from heat until chicken is cooked through and onions are golden, 10-15 minutes.
Serving: one four oz breast plus 1/2 cup onions.
