Ingredients

Cake:
3/4 c egg beaters
1 c sugar
2/3 c applesauce
3/4 c flour
1 tsp baking soda
2 tsp cinnamon
1 tsp ginger
1/4 tsp salt
1 c chopped walnuts
Filling
8 oz fat free cream cheese
2 tbs I Can't Believe It's Not Butter Light Spread
1 tsp vanilla extract
1 c powdered sugar
Directions
For the cake:
Preheat oven to 375 degrees. Beat eggs for 5 minutes. Gradually beat in sugar. Stir in applesauce. Set aside. Combine flour, baking powder, ginger, cinnamon, and salt. Fold in applesauce mixture, mixing well. Line a jelly roll pan with parchment paper. Spread batter on pan and top with nuts. Bake 15-20 minutes. Turn out on a towel sprinkled with powdered sugar. Roll from narrow end. Let cool completely. Unroll. Fill and roll again.
For the filling:
Cream together the cream cheese, margarine, and vanilla. Add the powdered sugar and mix until smooth.
Makes 24 slices, measuring slightly more than 1/2 an inch in width. (about one line past the 1/2 inch marker on a measuring tape)
