Introduction

Although this is just a basic meatloaf, the sauce makes it a killer recipe. Basically, you bake the meatloaf, then about 10 minutes before it's done, you drain it and add the sauce. Ingredients

    1/2 lb Lean Ground Sirloin (10% Fat)
    1 whole Egg
    1 Egg Yolk
    1 large onion, chopped finely
    1 tsp Better Than Bouillon Vegetable dissolved in 1/2 cup boiling water
    1/2 cup Milk (2%)
    1 slice Bread (reduced-calorie, wheat), torn into pieces
    1 TBSP Lea & Perrin's Worcestershire Sauce
    1/2 cup TVP (Textured Vegetable Protein)
    1/2 cup Catsup
    1/4 cup Brown Sugar, packed (no substitutions)
    2 TBSP Cider Vinegar (no substitutions)

Directions

Heat oven to 350. In medium bowl, combine egg, egg yolk, bread, milk, and Worcestershire sauce. Mash with fork. Set aside. In small bowl, boiling water and bouillon. Stir to dissolve. Add TVP and set aside. In another small bowl, combine catsup, brown sugar, and cider vinegar. Set aside. Chop onion. In large bowl, combine onion, ground beef, egg mixture and TVP mixture. Mix well. mound lightly into bread pan. Do not pack. Bake 30 minutes. Remove from oven. Carefully drain pan. You can slice the loaf at this point if you wish, or not. Pour sauce over top and return to over. Bake 10 minutes longer.
