Ingredients

2 lb pork loin
5 sprigs parsley, chopped
2 tbsp fresh thyme, chopped
2 tbsp fresh rosemary, chopped
1 cup plus 2 tbsp honey
1 cup lite soy sauce
1 large potato diced
16 baby carrots
20 rings onion
Directions
combine herbs, soy sauce and 1 cup honey, mix well.
Place pork loin in large container or baggie, pour honey mixture over it. Let it marinade 8 hours. Half way through the marinade cycle, stumble down the hallway, and turn pork over to marinade the other side also.
Preheat oven to 350 degrees. drain marinade, Place pork loin in oven pan, place onions, potatoes and carrots around the pork loin, drizzle vegetables with olive oil.
Take 2 tbsp honey and cove the top and sides of pork loin.
Bake until internal temperature reads 160 degrees(roughly 60 -75 minutes.
Let pork rest for 5 minutes before slicing.
