Ingredients

    4 cups onion, sliced thin
    1 tbsp olive oil
    1 tsp celery seed
    2 cloves garlic, 1 minced fine, 1 reserved
    1 qt. beef broth
    1 tbsp cider or wine vinegar
    1 tsp Worchestershire sauce
    1/2 cup red wine (burgundy is best)
    4 slices french bread, toasted crisp
    2 oz gruyere cheese, shredded

Directions

Heat olive oil in a pot and add onions. Cook on medium low heat until onions are caramelized, about 30 minutes. Add garlic and cook another minute. Deglaze pan with red wine, stir and add broth, celery seed, vinegar and Worchestershire sauce. Simmer this for at least 45 minutes, until onions are very tender and flavors have melded. Adjust salt as necessary. To serve, take a piece of the toasted bread and rub with the reserved garlic clove. Place on top of a bowl of soup, top with 1/2 oz of shredded gruyere cheese and broil until brown and bubbly.
