Introduction

Ingredients

    1.5 C Cornmeal
    2 C of Skim milk
    4 C Chicken Broth (I like to use Pacific Organic Chicken Broth)
    1/4C grated parmesan cheese
    Salt and pepper to taste

Directions

This recipe generously serves 6

1) Combine milk and chicken broth and bring to a boil on the stove.
2) Slowly add the cornmeal while constantly whisking. Bring heat down to medium.
3) Keep stirring until it thickens (approx 10 minutes).
4) Stir in parmesan cheese and salt and pepper to taste.

    This is a really good recipe. Only difference is that we like ours firm so we put it in the oven to bake. YUM! - 12/29/09

    Tasty and a nice change up from the tasteless fat-free packaged polenta. It's easily made vegan by using unsweetened soy milk, vegetable broth and soy cheese. (I used real cheese as I'm not vegan!) - 8/9/07
