Introduction

This is a dish my mom used to make when I was growing up. One of my favorites. I have also made it with ground turkey - tastes just as yummy! This is a dish my mom used to make when I was growing up. One of my favorites. I have also made it with ground turkey - tastes just as yummy!

Ingredients

    2 pounds ground beef
    1/2 cup chopped onion
    1 clove minced garlic
    2 cups water
    16 oz can of tomatoes, undrained, cut up
    6oz can tomato paste
    1 1/3 cup pearled barley

Directions

Brown beef, onion, and garlic; drain.
Add the rest of the ingredients and bring to a boil.
Reduce heat, cover, and simmer for 50-60 minutes or until barley is tender.

I have had a hard time finding pearled barley lately. I have made the recipe with quick cook barley and it works fine. Just reduce the simmering time to about 20-30 minutes, or until the barley is plump and tender.

    Incredible!
    Delicious and filling. I picked this recipe because barley is a low glycemic food and because I don't always eat enough grains. I added a little chopped celery to the recipe and black pepper. This recipe makes enough to feed 8 people - pretty good for a main dish. - 1/1/11

    This was good and had lots of flavor, but it turned out drier than I expected. My tomatoes were only 14.5oz, so I made up the difference with water, but maybe I simmered it too high or something. I still needed to add another 1/4 cup of water at the end to finish cooking my barley. - 10/15/10
