I make this totally organic and you can add meat if you would like, chicken is great in this recipe. You can spice it up with hot sauce also. Ingredients

1 package of carrots
1 head cauliflower
1 bunch of broccoli
1 small package of corn
1 can black beans
1 large container of mushrooms
2-1qt low sodium chicken stock
2 pkts of taco seasoning
1 large onion
Directions
Put all ingredients in a large pot and cook on med-high for about 45 min than simmer for 15. Do not let the veggies get to mushy.
