Ingredients

12 oz package Morning Star crumbles
1 cup mirepoix style frozen chopped vegetables
1 package (2 cups) Uncle Ben's whole grain chicken flavored ready rice
1 8 oz package raw sliced mushrooms
1 8 oz can sliced water chestnuts
4 T lite soy sauce
1/4 cup corn starch
1/4 cup water
1 t red pepper flakes
salt & pepper
12 oz bibb lettuce
Directions
1. spray a nonstick pan with cooking spray and saute mirepoix mix and mushrooms until tender.
2. meanwhile, mix the water and corn starch together. add the soy sauce to the corn starch mix then pour into skillet with veggies.
3. add the water chestnuts and veggie crumbles to the pan. continue to cook over medium heat, stirring to mix and coat everything in the sauce.
4. microwave the rice according to package directions, then add to skillet.
5. season all with red pepper flakes and salt/pepper to taste
6. serve with lettuce leaves and wrap mixture inside
