Introduction
This was something the DH fell in love with on last shopping trip- turned out to be an expensive way to make my homeade Encilada Casserole! So I revised it for a lower Carb Diet. Ingredients

1 lb lean Ground Beef or Turkey, beef used in mine.
1 El Paso Dinner Kit. I've replaced the Tortillas that came with the kit for the Low Carb Versions!
1 Cup, Water
1 Can, Kidney Beans, rinsed and drained. I opted to use the Frozen Mexican & Black Beans Vegetable Blend.
1 Jar (16 oz.) Salsa, I used 1 1/2 Cups.
1 Cup, Shredded Monterey Jack Cheese, or Cheddar.
Directions
Spray a glass baking dish with PAM, 2 qt. sized.
Line with 1 1/2 soft low carb tortillas, cut in half to cover as much area as possible. Sprinkle the Tortillas with 1/2 C. of the thawed Vegetable Blend. Sprinkle with 1/2 of the Salsa and smooth across to cover evenly with a spoon or spatula. Sprinkle the 1st layer with half of the Cheese.
Meanwhile, cook Meat until just browned and follow the box directions for the fillings and ingredients that came with the kit. Once that is done according to the directions, layer half of the Meat filling onto the 1st layer in the dish and proceed onto the last one as directed on the box.
Bake at 400*, for 20-25 minutes and let cool for 5 minutes before serving.
