Ingredients

    1 18.5 oz Yellow Pudding Cake
    1 tsp baking powder
    1/2 tsp baking soda
    1 tsp cinnamon
    1 tsp ground clove
    ¾ tsp allspice
    1 20 oz can of crushed pineapple with juice
    1 small egg
    ¼ cup chopped walnuts

Directions

Pre heat oven to 350 degrees, then spray 9x13 cake pan with cooking spray and dust with flour. In a large mixing bowl stir together 1st 6 dry ingredients. Blend in crushed pineapple and egg at low speed for 30 seconds then beat for 3 minutes at medium speed, scrapping bottom and sides often. Stir in nuts. Pour batter into prepared cake pan and bake at 350 until done, approximately 30 minutes.

Cake is done if toothpick inserted in center comes out clean. Allow cake to cool completely before cutting into 24 pieces. Serve with a dab or two of Fat-Free whipped topping (not included in calorie count) in place of a frosting.
