Introduction

Vegan*-friendly version of Oatmeal Craisin Cookies! Low fat, cholesterol-free, delicious cookies that will disappear before your eyes! Using steel-cut oats gives it a more rustic flavor and texture, as well as added fiber!

*NOTE: I considered Splenda as vegan, but many vegans do not because it has been reported that they test on animals. If you would like to substitute regular brown sugar in this recipe, go right ahead, but realize that this will change the nutrition information!

Ingredients

    2 cups Trader Joe's Quick Cook Steel Cut Oats
    1.5 cups whole wheat flour
    1 cup unsweetened apple sauce
    .75 cups Craisins (or other dried fruit)
    .25 cups Splenda Brown Sugar Blend
    5 tbsp ground flax meal
    6 tbsp water
    2 tsp ground cinnamon
    1 tsp vanilla extract
    1 tsp baking powder
    .25 tsp baking soda

Directions

Preheat oven to 375 degrees F.

In a small bowl, whisk together the flax meal and water until it becomes a bit gooey and gelatinous. Set aside.

In a large bowl, combine the apple sauce, brown sugar, flax meal mixture, and vanilla. Mix until sugar is thoroughly wet. Add remaining ingredients except for Craisins.

When mixture is combined thoroughly, add Craisins and mix.

On a lightly floured cookie sheet, put tablespoon-full sized balls of dough about an inch apart. (They do not grow in size.) Lightly press down on the top to make them into a cookie shape, as they do not spread out on their own.

Bake at 375 for 15 minutes or until golden.

Yields approximately 42 cookies.

    This looks SO GOOD! I was thinking about making them into steelcut oatmeal bars instead of cookies. I just have a question - I only have ordinary steelcut oats, not the quick cooking kind, but I'll just let it soak overnight :) - 6/25/11
